The Sweetest Valentine’s Treat
Valentine’s hasn’t always been my favorite holiday, and it’s still not number one. However, I’m not dreading it as much this year. I actually have a Valentine this year (hi, Scott), and my gift is on point. My favorite part of this holiday however is all the sweets I get to eat. It’s like a romantic Halloween. The best sweet I’ve ever eaten on Valentine’s day is thanks to my mom. Warning: be prepared for your next guilty pleasure.
Lucky for me (and you) my mom has shared her secret to making a classic cookie trendy again. The oatmeal raisin cookie gets a lot of roast on social media, but with just a couple tweaks it’s simply delicious. The first secret is switching the raisins to craisins, which in my opinion are much sweeter. The second secret is add white chocolate chips. How brilliant? Not only are these gems tasty, they’re festive for this holiday as well!
Ingredients
-1 cup butter, softened
-1 cup sugar
-2 eggs
-1 tsp cinnamon
-3 cups quick cooking oats
-1 cup packed brown sugar
-1 tsp vanilla extract
-2 cups all purpose flour
-1 tsp baking soda
-1 tsp salt
-3/4 cup craisins
-3/4 cup white chocolate chips
Directions
Preheat oven to 375°. In a medium bowl, cream together butter, sugar, and brown sugar. Beat in 1 egg at a time, then stir in vanilla. Combine flour, baking soda, salt, and cinnamon. Gradually stir into the creamed mixture. Mix in oats, craisins, and white chocolate chips.
Line your cookie sheets with parchment paper for easy clean up and use a cookie scoop to get batter into uniform sizes and shapes. Place dough balls on cookie sheet 2-3 inches apart. Bake for 8-10 minutes and let cool completely before storing.
Here’s a hint you haven’t heard before. If you don’t want to make all the cookies at once, put the balls on a cookie sheet lined with wax paper. Stick that sheet in the freezer for 10 minutes. Put frozen balls into a freezer bag. Don’t forget to label the bag with what they are, how long to bake, and what to preheat the oven to!
These cookies are a great snack at any time of the day. My mom and I love having them with our morning coffee because it reminds us of a granola bar. Although these are packed with sugar, I don’t feel guilty eating them, especially on Valentines day.
